Chicken with Three Sauces

Ingredients
- 10 oz rice
- 1.5 cups water
- 1 tbsp ginger cut into small strips
- 2 tsp vegetable stock
- 1 tbsp soy sauce
- 1 tsp olive oil
- 1 tsp salt
- 2 chicken breasts
- green onion
- 1/3 cup soy sauce for the dips
- 1/4 cup honey for the dips
- 1/2 cup sweet and sour sauce for the dips
- lemon juice for the dips
- 1 tbsp sesame oil for the dips
- 1 tbsp spring onion for the dips
- 1 tbsp minced ginger for the dips
- 2 tsp sugar for the dips
Instructions
- Wash the rice with cold water and put it into a pan. Add the water, ginger, vegetable broth, soy sauce, oil and salt. Mix the ingredients thoroughly before placing the chicken breasts and onion on top. Put the lid on the pan and let simmer on low heat for 14 minutes. Turn off the heat and let the pan sit covered for another 10 minutes.
- For the first sauce, mix 1/4 cup of soy sauce with the honey. The second sauce consists of sweet and sour sauce mixed with lemon juice. For the third sauce, mix 1 tbsp of soy sauce with the sesame oil, spring onion, sugar and ginger.
