Cheesy Chicken Hash Brown Sandwich

Hash browns are always a good idea. After all, who can resist thinly sliced potatoes cooked to crispy, golden brown perfection? We love them so much that instead of keeping hash browns on the side, we’ve decided to make them the star of this delicious dish. We’re also giving hash browns a big upgrade for this recipe and adding in some chicken! But the chicken hash brown buns are just the beginning, because we’re adding our favorite ingredients in between, like pickled beet slices, melted cheese, and a creamy homemade mushroom sauce. This is truly a sandwich unlike any other you’ve tasted before!

Ingredients
  

  • 8 oz chicken breast, minced
  • 3 potatoes, peeled & shredded
  • 2 eggs
  • 2 tbsp flour
  • salt & pepper to taste
  • 6 oz mushrooms, sliced
  • 1 onion, diced
  • 1 clove garlic, minced
  • 3 tbsp white wine
  • 1/3 cup heavy cream
  • 2 tbsp parsley
  • salt & pepper to taste
  • pickled beet slices
  • lettuce
  • melted cheese

Instructions
 

  • For the chicken hash brown buns, combine the minced chicken breast, shredded potatoes, eggs, flour, salt, and pepper. Heat some olive oil in a pan over medium heat, spoon half of the chicken hash brown mixture into the pan, and fry on both sides until the chicken is cooked through and the potatoes are golden brown. Repeat the process for the second chicken hash brown bun.
  • For the mushroom sauce, heat some olive oil in a pan over medium heat and briefly sear the sliced mushrooms. Add the onion and garlic, and once they are cooked through, deglaze the mixture with the white wine. Once the white wine has boiled down some, add the heavy cream and parsley and season with salt and pepper.
  • Top one of the chicken hash brown buns with pickled beet slices, pour the mushroom sauce on top, garnish with lettuce and melted cheese, and place the second chicken hash brown bun on top.
