Chicken Fajita Roll
Chicken fajitas are especially popular because they combine tender chicken with fresh veggies and a spicy sauce. And while they're great on their own, you should really try this XXL roll recipe that really outshines any chicken fajita wrap.

Ingredients
- 3 chicken breasts
- 200 g bell peppers
- 100 g onion
- 1 garlic clove
- 120 ml salsa
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp cinnamon
- 1 tsp chili flakes
- 2 tsp salt
- 200 ml evaporated milk
- 225 g cheddar
- 2 tbsp corn starch
- 2 tbsp chili sauce
- jalapeños to taste
- oil for cooking
- 1 pizza dough sheet
Instructions
- Heat some oil in a pan and roast the chicken until cooked all the way through. Remove the chicken from the pan and let it cool down.
- Sweat the sliced peppers, onions, and garlic in a pan.
- Use two forks to shred the chicken meat.
- Mix the vegetables and chicken together in a bowl and season with salsa, cumin, coriander, cinnamon, chili flakes, and salt. Stir everything together well.
- Spread the mixture over a sheet of pizza dough and cut into three wide strips.
- Roll up the first strip. Place this roll on the second strip, and roll it up into one strip. Repeat with the third and final strip, and you'll end up with one giant fajita roll.
- Place the roll in a pan and bake in the oven for 40 minutes at 355°F.
- Add all the sauce ingredients together in a pot and stir until a creamy sauce forms.
- Pour the sauce over the gigantic chicken fajita roll and top with jalapeños. Yum!
