Bacon-Wrapped Chicken Drumsticks with Cheesy Mashed Potatoes
Bacon-wrapped drumsticks, which are crispy on the outside and moist on the inside, are enough to make any meat lover's heart skip a beat. And when those drumsticks are enveloped in a blanket of buttery, well-seasoned mashed potatoes and cushioned by a crispy toast crust on the bottom, you know dinner's going to be finger-licking good!

- Parchment paper
- Square 9x9 inch springform pan
Ingredients
- 9 chicken drumsticks
- 3 tbsp paprika
- 2 tbsp chili powder
- 2 tbsp BBQ seasoning
- 18 slices bacon
- 5 slices whole wheat bread
- 2 tbsp melted butter
- 4 lbs potatoes, boiled
- 3/4 stick butter
- 3/4 cup warm milk
- 6 egg yolks
- 3 tbsp parsley
- salt, pepper & nutmeg to taste
- 1 cup shredded cheese
- 1/4 cup crispy fried onions
Instructions
- Combine the paprika, BBQ seasoning, and chili powder and coat the chicken drumsticks with the spice rub.
- Wrap 2 slices of bacon around each chicken drumstick and place the drumsticks on a sheet pan lined with parchment paper. Transfer the sheet pan to a preheated oven and cook at 300°F for 30 minutes.
- Remove the bread crusts and line the bottom of a square 9x9 inch springform pan with the bread slices. Brush melted butter over the bread, place the springform pan in the oven, and cook at 350°F for 10 minutes.
- Mash the boiled potatoes and combine them with the butter and warm milk. Add the egg yolks and parsley, season with salt, pepper, and nutmeg, and mix well.
- Spread the mashed potatoes over the toasted bread and smooth out the top.
- Press the BBQ bacon chicken drumsticks into the mashed potatoes.
- Sprinkle cheese on top, put the pan back in the oven, and cook at 350°F for another 25 minutes. Garnish the finished chicken drumstick pie with crispy fried onions.
