Crispy Chicken Drumsticks Stuffed With Mashed Potatoes And Cheese
Chicken is always a popular dinner option, especially because it has great flavor and little fat. But sometimes you just have to treat yourself to the finer things in life, so go ahead and mix your juicy chicken with creamy mashed potatoes and cheese and fry it up until it's nice and crispy!
Ingredients
- 2 tbsp olive oil
- 6 chicken drumsticks
- salt & pepper to taste
- 3 garlic cloves
- 1 rosemary sprig
- 2/3 cup white wine
- 1 1/4 cups chicken broth
- 2 cups mashed potatoes
- 2 cups shredded mozzarella cheese divided
- 1 tbsp paprika
- 2 cups flour
- 3 eggs whisked
- 2 cups bread crumbs
Instructions
- Heat some olive oil in a pan over medium heat. Season the chicken drumsticks with salt and pepper and cook them on both sides. Add the garlic, rosemary, white wine, and chicken broth to the pan, cover with a lid, and let cook for 45 minutes.
- Remove the chicken drumsticks from the pan and let cool. Gently remove the bones from the meat and set them aside for later.
- For the cheesy mashed potatoes, combine the mashed potatoes, 1 cup of shredded mozzarella cheese, paprika, salt, and pepper. Shred the chicken meat, add it to the cheesy mashed potatoes, and mix well.
- Divide the cheesy chicken mixture into 6 even portions. Flatten 1 portion in your hand and sprinkle 1/6 of the remaining shredded mozzarella cheese over it. Place 1 of the chicken bones in the middle and form the mixture around the bone so that it looks like a drumstick. Repeat with the remaining cheesy chicken mixture and bones until you have 6 drumsticks. Freeze the drumsticks for 20 minutes.
- Coat the cheesy chicken drumsticks in flour, egg, and bread crumbs. Heat some cooking oil in a large pot to 350°F and fry the drumsticks until golden brown.
