Cheesy Cauliflower Snacks That Even The Kids Will Love

Whether served as a side dish, a casserole, or even in pizza form, cauliflower is one versatile vegetable that’s becoming more and more popular. Now it can even be served as a snack! That’s right, chips and crackers have nothing on this humble veggie. So go on, show the cauliflower some more love!

Cheesy Cauliflower Snacks

Equipment

  • Sheet pan
  • Parchment paper

Ingredients
  

  • 1 head cauliflower
  • 2 eggs
  • 0.5 tsp oregano
  • 2 cloves garlic chopped
  • 14 oz shredded mozzarella
  • 1 cup grated parmesan
  • salt and pepper to taste
  • chopped parsley

Instructions
 

  • Grate the entire head of cauliflower.
  • Add all the ingredients and 3½ oz of the mozzarella to the grated cauliflower and season with salt and pepper to taste. Mix thoroughly and press the mixture onto a sheet pan lined with parchment paper.
  • Bake at 340°F for 25 minutes.
  • After baking, sprinkle the rest of the mozzarella on top, along with some pepper. Bake once more for 10 minutes at 340°F.
