Whether served as a side dish, a casserole, or even in pizza form, cauliflower is one versatile vegetable that’s becoming more and more popular. Now it can even be served as a snack! That’s right, chips and crackers have nothing on this humble veggie. So go on, show the cauliflower some more love!
Cheesy Cauliflower Snacks

- Sheet pan
- Parchment paper
Ingredients
- 1 head cauliflower
- 2 eggs
- 0.5 tsp oregano
- 2 cloves garlic chopped
- 14 oz shredded mozzarella
- 1 cup grated parmesan
- salt and pepper to taste
- chopped parsley
Instructions
- Grate the entire head of cauliflower.
- Add all the ingredients and 3½ oz of the mozzarella to the grated cauliflower and season with salt and pepper to taste. Mix thoroughly and press the mixture onto a sheet pan lined with parchment paper.
- Bake at 340°F for 25 minutes.
- After baking, sprinkle the rest of the mozzarella on top, along with some pepper. Bake once more for 10 minutes at 340°F.
