Two of everyone’s favorite comfort foods are definitely potatoes (served in pretty much any way possible) and meatballs, but for some reason you rarely see the two together on one plate. Well, we’re here to change that with these cheddar jalapeño meatballs served on crispy, crunchy potato nests. From the perfectly-baked potato base to the juicy meatballs stuffed to the brim with spicy peppers and cheddar sitting on top, this recipe is about to become your new favorite main course. Just when you thought comfort food couldn’t get any tastier, this dynamic duo came around!
Cheddar Jalapeño Meatballs
Ingredients
- 4 medium potatoes peeled & julienned
- 0.5 bunch green onions sliced
- 2 eggs
- salt & pepper to taste
- 1 lb ground beef
- 0.33 cup bread crumbs
- 2 eggs
- 1 tbsp ketchup
- 1 tbsp mustard
- salt & pepper to taste
- 5 jalapeños
- 4 oz cheddar cheese cubed
- 1 cup shredded mozzarella cheese
Instructions
- Combine the julienned potatoes, sliced green onions, and eggs and season with salt and pepper. Divide the potato mixture into 9 equal portions and place them on a baking tray lined with parchment paper.
- Cut off the ends of the jalapeños and remove the seeds inside. Fill each jalapeño with a cheddar cheese stick and cut the stuffed jalapeños in half.
- Combine the ground beef, bread crumbs, eggs, ketchup, mustard, salt, and pepper and divide the ground beef mixture into 9 equal portions. Wrap 1 portion of ground beef around each stuffed jalapeño and shape it into a ball. Place a stuffed meatball on top of each potato nest.
- Sprinkle shredded mozzarella cheese on top of each cheddar jalapeño meatball. Transfer the baking tray to a preheated oven and cook at 350°F for 30 minutes.
