Cauliflower Cheese Sandwich Straight From The Oven Is A Lunchtime Favorite

Our Cauliflower Pizza recently showed the many talents this vegetable has. As you’ll see, we now have further video evidence of cauliflower’s versatile abilities. This certainly isn’t just any old cheese sandwich.

Ingredients
  

  • 1 cauliflower
  • 20 g wheat flour
  • 20 g almond flour
  • 1 tsp baking powder
  • 2 eggs
  • 50 g grated parmesan
  • 1 tsp salt
  • 1 tsp pepper
  • 6 slices cheese

Instructions
 

  • Remove the stem from the cauliflower and grate the florets. Mix the grated cauliflower with the wheat flour, almond flour, baking powder, eggs, parmesan, salt, and pepper to form an even mixture.
  • For each portion, you'll need two large tablespoons of the mixture on a greased baking tray. Flatten the mixture and shape it into a rectangle. You'll need four of these. Bake your cauliflower rectangles at 360°F with the top and bottom heat on for 20 minutes.
  • After baking, place two slices of cheese on three of the cauliflower rectangles. Stack the rectangles and place the one without cheese on top. Bake the sandwich for five more minutes at the same temperature.

Notes

If you want to add a bit of freshness to your sandwich, why not add some lettuce and tomatoes in between each layer. Add any greens before the last round of baking, so that they don't wilt. Enjoy!
