Equipment

  • Springform pan
  • Hand mixer
  • Water bath
  • Bubble wrap

Ingredients

  • 1 cup sugar
  • 4 eggs
  • 2 tbsp vanilla extract
  • 0.5 tsp baking powder
  • 1 pinch salt
  • 1 cup flour
  • 1 cup soft butter
  • 0.5 cup cream
  • 10 oz milk chocolate
  • 10 oz dark chocolate
  • 2 cups fresh blueberries
  • 1.5 cups strawberries
  • several mint leaves

Instructions

  • Use a hand mixer to mix up the sugar and eggs until they're frothy. Then add the vanilla extract, baking powder, salt, and flour while continuing to mix. Cut the butter into small pieces and add it to the mixture. Fill a small springform pan with the mixture and bake it at 300 °F for 40 minutes.
  • Remove the cake from the springform pan and cut it in half. For the filling, heat up the cream in a pan and add broken up pieces of chocolate. While stirring, heat the mix until the chocolate is completely melted. Spoon half of the chocolate mix onto the lower half of the cake. If the mix is too runny, let it cool for a while longer. Place the upper half of the cake on top of the chocolate mix and spread the rest of the chocolate on the top of the cake.
  • For the decoration, melt the dark chocolate in a water bath. While the chocolate is melting, cut a strip of bubble wrap that's long enough to go around the cake and measures approximately an inch higher than the cake. Spread generous amounts of the melted chocolate onto the bubble structured side of the bubble wrap. Leave the chocolate to dry on the bubble wrap for approximately 10 minutes before wrapping it around the cake. Once the chocolate has hardened, carefully peel the bubble wrap away. Cover the top of the cake with a layer of blueberries. Add strawberries and the mint leaves for the crowning touch.
