Ingredients
  

  • 1 pork leg (about 12-14 lbs)
  • 1/3 cup apple cider vinegar
  • 1/3 cup apple juice
  • 2 tbsp Worcestershire sauce
  • 4 tbsp lime juice
  • 1 tbsp Tabasco
  • 3 tbsp salt
  • 1 tbsp paprika
  • 1.5 tbsp salt
  • 1.5 tbsp paprika
  • 1.5 tbsp brown sugar
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp ground mustard
  • 1 head of cabbage, shredded
  • 2 large carrots, shredded
  • 1 onion, diced
  • 2/3 cup sour cream
  • 1/3 cup mayonnaise
  • salt & pepper to taste
  • sugar to taste

Instructions
 

  • Score the skin of the pork leg by cutting diagonally across the surface.Scoring the pork leg skin
  • Mix together the ingredients for the marinade and fill the barrel of the injector with the marinade by pulling back the plunger.Filling the injector with marinade
  • Turn the leg over and inject the meat with the marinade at several different points.Injecting the marinade into the pork leg
  • Mix the dry rub ingredients together in a bowl and rub it into the underside of the pork leg.Applying the dry rub to the pork leg
  • Turn the leg back over to the skin side and rub with salt. Place the leg on a grate elevated above the grill surface and cook on indirect heat at 400-450°F for 1½ hours. After the first round of cooking, close the grill vent and add more charcoal if necessary. Altogether, the pork leg should cook for 2-3 hours depending on its weight.
  • While the pork leg is cooking, prepare the homemade coleslaw. Remove the outer leaves from the head of cabbage, then wash it and chop it up into strips, being sure to remove the core beforehand. Mix the cabbage with the other coleslaw ingredients and chill in the fridge until ready to serve.
