If you want Christmas to be a success, you’ve got to serve up some tasty traditional food over the holiday period. And baked apples are always a welcome sight on those cold winter nights. Our festive version here features a delightful cranberry and ginger filling — what a delicious way to get into the Christmas spirit!
Baked Apple Cheesecake
Equipment
- Electric whisk
- Small round casserole dish
Ingredients
- 2 medium-sized apples
- 1 cup low fat mascarpone
- 1 egg
- 1 oz sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp semolina
- 3.5 oz cream cheese
- 1 tsp orange zest
- 2 oz ground almonds
- 2 oz powdered sugar
- 4 tbsp amaretto
- 2 tsp brown sugar
- 2 tbsp chopped hazelnuts
- 4 tsp cranberries
- 1/2 tsp ground ginger
- 1/4 tsp ground lemongrass
- 2 oz rye bread, chopped up
Instructions
- Mix all the ingredients for the cheesecake using an electric whisk and add the mixture to a small, round casserole dish.
- Cut away the top quarter of the apple and hollow it out. Make sure to keep the apple top for later! Place the hollowed out apple in the cheesecake mix.
- To prepare the apple filling, knead the almonds, icing sugar and two tablespoons of amaretto into a marzipan. Mix the ingredients thoroughly for a long time. While you can add a little more amaretto if needed, be aware that too much liquid can make the marzipan very sticky. Once you've made a compact, slightly sticky ball from the mix, press it flat onto the bottom of the bowl.
- Add the rest of the ingredients on top of the marzipan and knead them into it. Fill the apple with your marzipan.
- Place the top back on the apple and bake everything at 320°F for 40 minutes in a convection oven.
