Ingredients
- 1 bundle basil
- 1/3 cup pine nuts
- 2 cloves garlic
- 1/2 cup olive oil
- 1/2 cup parmesan
- 14 spears green asparagus
- 6 oz sun-dried tomatoes
- 1 bundle rucola
- 8 oz pasta
Instructions
- Cut the asparagus into thirds and add them into a pan. Drizzle some olive oil, salt, and pepper over it. Cook the asparagus until they are lightly browned on the sides.
- While the asparagus cooks, add olive oil, pine nuts, garlic cloves, parmesan, and the bundle of basil into a mixer. Mix well to make the pesto.
- Cook 8 oz. of pasta and pour it into a bowl.
- Add the pesto, asparagus, sun-dried tomatoes, and rucola to the pasta. Mix everything together so that the ingredients are evenly dispersed among the noodles.
- Put the pasta salad onto a plate and garnish it with some rucola and a drop of olive oil. Done!
