This hearty French take on schnitzel is just the thing for you! With just a few ingredients, this pork casserole manages to catapult you right into a flavor sensation.

Equipment

  • round casserole dish
  • Meat tenderizer

Ingredients
  

  • 2.5 lb pork tenderloin
  • salt & pepper
  • 14 oz crème fraîche
  • 2 red onions
  • 10 oz bacon, chopped
  • oil for cooking extra
  • chives to garnish extra

Instructions
 

  • Preheat the oven to 400°F and cut the pork tenderloin into thick pieces.
  • Lay the pork pieces between two large pieces of plastic wrap and then beat them with a meat tenderizer until they are thin schnitzel slices.
  • Season the meat with salt and pepper and fry in a pan on both sides until cooked through. Place half of the cooked pork schnitzels on the bottom of a round casserole dish.
  • Spread half of the crème fraîche over the meat.
  • Fry the red onions and bacon together in a bit of oil and sprinkle half of the mixture on top of the crème fraîche.
  • Place the remaining meat on top.
  • Spread the rest of the crème fraîche over the meat, sprinkle the remaining bacon and onions on top, and cook for 15 minutes.
  • Garnish the Alsatian schnitzel casserole with finely chopped chives, and after just one bite, you'll see what you've been missing out on all these years!
