I scream, you scream, we all scream for watermelon ice cream! Since we’re big fans of both watermelon and creative frozen treats, we decided to combine the 2 and bring you some delicious watermelon desserts. Fruity, refreshing, and definitely not too hard on the eyes, these 3 delicious frozen watermelon dessert recipes are just the sweet treats you’ve been looking for. Whether it’s our fruity watermelon-shaped frozen cake, dreamy raspberry & watermelon ice cream, our our adorable macaron ice cream sandwiches, each of these dessert ideas is guaranteed to sweeten your day!

1. Fruity Frozen Cake 

Yield: 1

Prep Time: 25 minutes

Inactive Time: 2 hours

Difficulty Level: Easy

You’ll Need:

  • 2 cups lime sherbet
  • 1½ cups lemon Italian ice
  • 2 cups strawberry ice cream
  • ¼ cup semi-sweet chocolate chips 

Here’s How:

1.1 Scoop the lime sherbet into a ring around the edge of a 10-inch springform pan, smooth the ring out around the edges, transfer the springform pan to the freezer, and freeze for about 30 minutes.

1.2 Scoop the lemon Italian ice into a ring just inside the lime sherbet, smooth it out, and freeze it for 30 minutes.

1.3 Stir together the strawberry ice cream and the semi-sweet chocolate chips, then transfer the ice cream to the center of the springform pan and smooth it out, filling in the springform pan. Transfer the fruity frozen cake to the freezer and freeze for 1 hour. When you’re ready to serve the cake, warm up your knife beforehand in order to cut into it more effectively.

2. Easy Raspberry & Watermelon Ice Cream

Yield: 8 servings

Prep Time: 25 minutes

Inactive Time: 8 hours

Difficulty Level: Moderate

You’ll Need:

  • 1 seedless watermelon
  • 1½ cups raspberries 
  • 1½ cups whipped cream
  • ¼ cup semi-sweet chocolate chips 

Here’s How:

2.1 For the easy raspberry & watermelon ice cream, cut off the end of the watermelon and puree the fruit inside using an immersion blender. 

2.2 Remove about ⅓ of the liquid, add in the raspberries, and puree the mixture again. For an even smoother ice cream, pour the pureed fruit through a sieve to remove any large chunks. Fold the whipped cream into the pureed fruit directly inside the watermelon, and stir until combined. Transfer the filled watermelon to the freezer and freeze for 2 hours.

2.3 Remove the watermelon from the freezer, stir the fruity mixture with a whisk, and fold in the semi-sweet chocolate chips. Transfer the watermelon back to the freezer and freeze for at least 6 hours, preferably overnight.

3. Watermelon Macaron Ice Cream Sandwiches

Yield: 10

Prep Time: 30 minutes

Cooking Time: 15 minutes

Inactive Time: 90 minutes 

Difficulty Level: Advanced

You’ll Need:

  • ¾ cup almond flour
  • 1¼ cups powdered sugar 
  • 2 egg whites, room temperature 
  • 1 tbsp sugar 
  • red & green food coloring
  • black sesame seeds
  • 1½ cups lemon Italian ice

Here’s How:

3.1 Preheat the oven to 300°F and line a baking tray with parchment paper. Beat 1 egg white with a hand mixer until light and fluffy, then gradually add in ½ of the sugar, beating continuously. Carefully add in the red food coloring and continue beating the mixture until a firm meringue forms. Pass ½ of the powdered sugar and ½ of the almond flour through a sieve directly into the mixing bowl and fold in the ingredients carefully. Transfer the pink mixture to piping bag with a round nozzle.

3.2 Repeat this process with the second half of the ingredients, using green food coloring instead of red. Pipe the pink macaron mixture onto the baking tray lined with parchment paper in a spiral pattern and sprinkle some black sesame seeds on top. Let the pink macaron spirals set for 10–12 minutes, then transfer the baking tray to the oven and bake at 300°F for 12–15 minutes. Remove the pink macarons from the oven and let them cool completely.

3.3 Repeat this same process with the green macaron mixture, this time without sprinkling black sesame seeds on top. 

3.4 Scoop some lemon Italian ice onto a large piece of plastic wrap and roll it up into a log. Transfer the lemon Italian ice to the freezer and freeze for 1 hour. Once it has chilled, remove the log of Italian ice from the freezer and cut it into equal segments.

3.5 To assemble the watermelon macaron ice cream sandwiches, place 1 green macaron on a clean work surface, add 1 segment of lemon Italian ice in the middle, and top it off with a pink macaron.

You don’t need an ice cream machine or experience making ice cream to make these 3 ingenious frozen creations. All 3 look and taste incredible and will add a colorful, original element to any occasion!
