There are few dishes that hit the spot quite like tacos do. But your typical ground beef, chicken, and fish tacos have been done to death, so why not switch it up and try these delicious pork belly tacos with a cherry cola marinade? We’ll admit, cherry cola might not pop into your head as the most Tex-Mex of ingredients, but its slightly fruity, tangy, sweet taste works perfectly with the spice mix we’ve chosen for our marinade, plus it makes the pork belly irresistibly tender and juicy. Serve everything up with a homemade pineapple salsa and you’ve got one tantalizing taco!
Pork Belly Tacos with Cherry Cola Marinade

Ingredients
- 2 lbs pork belly
- 24 oz cherry cola
- 3/4 cup BBQ sauce
- 1.5 cups sugar
- 3 tbsp oregano
- 3 tbsp paprika
- 3 tbsp salt
- 3 tbsp pepper
- 3 tortillas
- shredded lettuce
- pineapple salsa
- shredded cheddar cheese
- 1 pineapple, diced
- 1 red onion, diced
- 3/4 cup chopped parsley
- 1-2 chili peppers, diced
- 3 limes, juiced
- salt & pepper to taste
Instructions
- Combine the ingredients for the cherry cola marinade in a large casserole dish. Cut the pork belly into several equally-sized pieces, place them in the casserole dish, and let marinate for 5 hours.
- Cover the casserole dish with aluminum foil, place on the bottom rack of a preheated oven, and cook at 350°F for 1 hour. After 50 minutes, hang the 3 tortillas over the top oven rack and cook for 10 minutes.
- Remove the cooked pork belly pieces from the casserole dish, sear them on all sides in a pan over medium heat, and brush the cherry cola marinade over them.
- Cut the cooked pork belly into bite-sized pieces and prepare the pineapple salsa. Assemble the pork belly tacos with shredded lettuce, cherry cola pork belly pieces, pineapple salsa, and shredded cheddar cheese. Garnish with some of the cherry cola marinade before serving.
