Ingredients
- 1 lb potatoes
- 1 egg
- 1.25 cups flour
- 1 tsp salt
- 3 chicken breasts
- bread crumbs for the breading
- whisked eggs for the breading
- 1.67 cups flour
- 0.5 tsp paprika
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp salt
- 0.5 tsp pepper
- 2 tbsp butter
- 1 onion, diced
- 6 garlic cloves, minced
- 0.5 tsp crushed red pepper
- 1 tbsp paprika
- salt & pepper to taste
- 1 tbsp tomato paste
- 0.25 cup sun-dried tomatoes
- 1.67 cups heavy cream
- 4 oz baby spinach
- 2 tbsp grated parmesan cheese
Instructions
- Boil the whole potatoes with their skins on for 45 minutes. Drain the potatoes and let them cool before passing them through a potato ricer over a large bowl. Add the flour, egg, and salt to the bowl and knead the mixture into a dough. Shape the dough into multiple long strands and use a fork to cut the strands into smaller pieces. Roll the fork over each gnocchi piece to give them their distinctive look and boil the gnocchi in salted water until they float to the surface of the pot.
- Flatten the chicken breasts and prepare the breading station. Add bread crumbs to the first casserole dish, add whisked eggs to the second casserole dish, and combine the flour, paprika, garlic powder, oregano, salt, and pepper in the third casserole dish. Dredge the flattened chicken breasts in the flour mixture, whisked eggs, and bread crumbs. Heat some olive oil in a pan over medium heat and fry the breaded chicken breasts on both sides for about 2 minutes until golden brown. Remove the cooked chicken breasts from the pan and keep them warm.
- Melt the butter in a pan over medium heat and add the gnocchi. Once the gnocchi are cooked, add the onions, garlic, and sun-dried tomatoes to the pan, followed by the crushed red pepper, paprika, salt, pepper, and tomato paste. Deglaze the mixture with the heavy cream, add the baby spinach to the pan, and let everything cook together.
- Place the breaded chicken breasts back in the pan and garnish with grated parmesan cheese.
