It’s so hard to decide what to serve when you’re hosting a brunch. Eggs, bacon, pancakes, breakfast pastries – the list of delicious options goes on and on! Baking a quiche is a great crowd-pleasing way to serve multiple people, plus it always tastes delicious. And this quiche brings another yummy breakfast element to the table: its crown! The dish starts off with a mouth-watering ground beef & leek quiche base, but the real crowning glory of this recipe are the flaky stuffed pastry pockets baked right inside. It looks incredible on the table, but once you and your guests take your first bites, this quiche will disappear before your very eyes. It’s a royally delicious breakfast dish, to say the least!
Crown Quiche with Ground Beef and Leek Filling

Ingredients
- 1 lb ground beef
- oregano
- paprika
- salt & pepper to taste
- 1 leek, sliced
- 2 eggs
- 3 egg yolks
- 1 cup milk
- shredded cheddar cheese
- 1 puff pastry sheet
- sliced red onion
- whisked eggs for the egg wash
Instructions
- Preheat the oven to 350°F. For the ground beef & leek quiche, place the ground beef in a large mixing bowl and season it with oregano, paprika, salt & pepper. Heat some vegetable oil in a frying pan and sauté the ground beef, then add the sliced leek to the pan and cook everything until the leek has begun to soften.
- Whisk together the eggs, egg yolks, and milk in a large mixing bowl.
- Cut the puff pastry sheet into 4 equally sized squares, then cut each square in half diagonally to make triangles. Fill the triangles with shredded cheddar cheese and distribute ⅓ of the ground beef & leek mixture among each piece of puff pastry dough. Fold each piece of puff pastry dough in half and press down the edges of the dough to seal in the filling.
- Line a quiche pan with parchment paper and spoon the remainder of the ground beef mixture onto it. Pour the egg mixture on top of the ground beef mixture and sprinkle sliced red onion and shredded cheddar on top.
- Place the stuffed pastry pockets upright around the edge of the quiche pan. Whisk some eggs and brush the egg wash over the surface of the pastry pockets. Transfer the quiche pan to the oven and bake the crown quiche at 350°F for 30 minutes.
