Equipment

  • 32-oz lock lid jars
  • Large Pot

Ingredients
  

  • 1 lb pork neck divided into 3 portions
  • 2 tbsp salt
  • 2 tsp pepper
  • 3 sweet potatoes peeled & chopped
  • 1 red onion sliced
  • 6 slices pumpkin
  • 1 red bell pepper sliced
  • 6 carrots peeled
  • 1 orange sliced
  • 3 yellow chili peppers
  • 3 cinnamon sticks
  • 3 sprigs rosemary
  • 6 cherry tomatoes

Instructions
 

  • Cut the pork neck into 3 equally sized segments and season them with salt & pepper.

  • Divide the ingredients for the pork dinner of your choice equally between the 3 lock lid jars. Start by placing 1 slice of pork neck against the side of the jar, then position the potatoes at the bottom. Place the other vegetables on top, then add in the seasonings, spices, and herbs. Once all 3 jars are full, seal each one.

  • Place a kitchen towel at the bottom of a large pot, then place the 3 filled lock lid jars on top. Fill the pot ¾ of the way full with water, then heat the pot and put the lid on. Bring the water in the pot to a boil, then reduce the heat and let the pork neck jars gently simmer for 3 hours.

  • Remove the pot from the heat and carefully remove all 3 jars from inside. Now your flavorful pork dinner, complete with seasoned vegetables, is ready to be served!
