Is there anything more satisfying than freshly baked homemade bread stuffed with all of your favorite ingredients? We don’t think so, but we also wanted to move away from the classic sandwich, bread roll, and flatbread to try something new. We did some digging and found an incredible dish from Georgia – no, not that Georgia down south. We’re talking about the country nestled between Eastern Europe and Central Asia. Georgia has fantastic cuisine that we’ve left unexplored for far too long, so we’ve developed an easy recipe for khachapuri, a type of pan-fried baked bread stuffed with a whole range of different ingredients. In this recipe, we’re opting for a delicious ground beef and mozzarella filling and topping it all off with fried eggs. Now we’ve definitely got Georgia on our minds!

Equipment

Ingredients
  

  • 2 cups flour
  • 1 egg room temperature
  • 1/3 cup plain yogurt room temperature
  • 1 pinch salt
  • 3/4 stick butter melted
  • 10 oz ground beef
  • 1 onion diced
  • 1/2 tsp paprika
  • to taste salt & pepper
  • 2 cups shredded mozzarella
  • 1 egg
  • 3 eggs

Instructions
 

  • Stir together the melted butter and plain yogurt until combined, then add 1 egg to the mixture. Add in the flour and salt and knead everything by hand until a smooth dough forms. Cover the dough, transfer it to the refrigerator, and let it chill for 30 minutes.
  • Once the dough has chilled, remove it from the refrigerator and roll it out into a circle. Stir together the shredded mozzarella and 1 egg, then spoon the mixture into the center of the dough and spread it around evenly, leaving the outer edges uncovered.
  • Heat some vegetable oil in a skillet and cook the ground beef, then add in the onion and seasoning. Sauté the mixture until the onions become translucent and the ground beef is cooked all the way through. Spoon the ground beef on top of the mozzarella layer and spread it around evenly.
  • Fold the uncovered edges of the dough toward the center, twist the excess dough in the middle, and press down gently to seal it.
  • Heat a cast iron skillet on the stove with a thin layer of cooking oil and preheat the oven to 350°F. Once the cooking oil is warm, flip over the stuffed khachapuri and place it face down in the cast iron skillet. While the dough is cooking, make 3 evenly-spaced cuts across the top of the dough with a knife.
  • Fold the dough open where you made the cuts in order to make a large opening in the center of the khachapuri. Crack 3 eggs into the opening of the dough.
  • Once you've cracked the eggs into the dough, transfer the cast iron skillet to the oven and bake at 350°F for 30 minutes until golden brown.
