Equipment

  • Plastic Wrap
  • Cooking twine
  • Mortar and pestle

Ingredients
  

  • 1 lb pork
  • 2 tsp black peppercorns
  • 1 tsp fennel seed
  • 1 tsp juniper berries
  • 2 tsp kosher salt
  • 0.25 tsp thyme
  • 0.25 tsp rosemary
  • 0.25 tsp sage
  • 0.25 tsp oregano
  • 1 tsp onion powder
  • 1 tbsp minced garlic

Instructions
 

  • Finely mince the pork.
  • Toast the peppercorns, fennel seed, and juniper berries in a pan until fragrant, then crush them and the other herbs and spices with a mortar and pestle.
  • Add the spice blend, onion powder, and garlic to the pork and mix until combined. Take a handful of the seasoned pork, form it into a sausage, wrap it in plastic wrap, and seal both ends with cooking twine. Repeat with the rest of the pork until you have 5 sausages.
  • Boil the sausages in simmering water for 8-10 minutes.
  • To cool the sausages, thrust them into ice water for a second.
  • Remove the plastic wrap from the cooled sausages and fry them in some oil on all sides until they're nice and brown. Serve your homemade Italian sausages with potatoes and a nice salad.
