Equipment

  • Balloons
  • Parchment paper
  • jar
  • Wooden Skewer
  • hot knife

Ingredients

  • 2 lbs white chocolate tempered
  • 1 lb dark chocolate tempered
  • 3/4 cup heavy cream heated
  • 4 cups whipped cream
  • 2 tbsp unflavored gelatin powder
  • M&M's
  • 1 orange fondant carrot
  • red sour candy belts
  • chocolate ganache

Instructions

  • Start by making the body of the snowman. Blow up both balloons, making sure that one is slightly smaller than the other. Wash them thoroughly, wipe them dry, and pour the tempered white chocolate over them.
  • Carefully place the chocolate-coated balloons on a board lined with parchment paper and let the chocolate set a bit. Then refrigerate until the chocolate has hardened completely.
  • Take the balloons out of the fridge, cut off the knots keeping the balloons closed, and pop the balloons with a wooden skewer.
  • Level the edges of the openings with a hot knife and then gently remove the balloon remains from inside the chocolate spheres.
  • For the white chocolate cream, mix the leftover white chocolate and unflavored gelatin powder with heavy cream that's been heated to at least 140°F. Let the mixture cool to about 68°F and then fold in the whipped cream. Stack the hollow chocolate bodies on top of each other on a plate (with the slightly smaller sphere on top) and fill them to the top with the white chocolate mousse.
  • To make the carrot nose, wrap orange fondant around a wooden skewer. Give the snowman his eyes and mouth by gluing the M&M's and orange fondant carrot to his face with melted white chocolate. Glue a few sour candy belts together with melted white chocolate and drape the candy scarf around the snowman's neck.
  • To make the hat, cut two strips of parchment paper into equally-sized oblong rectangles and spread a thin layer of the tempered dark chocolate over one of the strips.
  • Place the second strip of parchment paper on top, let the chocolate set a bit, and then use a jar to roll it up. Fix the point where the beginning and the end of the chocolate roll meet so that the roll can harden into a cylinder and does not stick out from the jar.
  • Pour more tempered dark chocolate into a round, flat circle on a piece of parchment paper and then refrigerate both parts of the hat.
  • Once both parts of chocolate have completely hardened, carefully remove the parchment paper and level the upper edge of the cylinder with a hot knife.
  • Immediately place the round chocolate circle on top and then let the chocolate harden so that the individual components of the hat don't move.
  • Now you just need to put the hat on top of the snowman, fill it with chocolate ganache, and you've got yourself the most epic, adorable, and chocolatey snowman in the whole wide world!
