Ingredients
  

  • 5 cups flour
  • 3.5 sticks butter cubed
  • 1 tbsp salt
  • 2 tbsp cold water
  • 3 lbs ground beef
  • 1 head broccoli cut into florets
  • 4 oz sun-dried tomatoes diced
  • 3 cloves garlic minced
  • 1 tsp rosemary
  • 1 tsp salt
  • 1 tsp pepper
  • 0.25 stick butter cubed
  • 0.33 cup flour
  • 1.25 cups broth chicken or vegetable

Instructions
 

  • Pour the flour onto your work surface and press a well into the center with your fist. Add the cubed butter, egg yolks, and the rest of the ingredients to the well and knead until a smooth dough forms. Wrap the pastry dough in plastic wrap and refrigerate for 30 minutes.
  • Roll out the refrigerated pastry dough on a floured work surface and line a loaf pan with it.
  • Cut off any excess dough with a knife and set aside for later.
  • Preheat the oven to 325°F. For the filling, fry the ground beef in a pan with a bit of olive oil before adding the vegetables and garlic. Season with rosemary, salt, and pepper and set aside for now.
  • For the gravy, melt the butter in a saucepan and stir in the flour. Allow the roux to foam up briefly before adding the broth.
  • Bring the gravy to a boil, pour it over the ground beef vegetable mixture, and stir well.
  • Transfer this mixture to the loaf pan lined with pastry dough.
  • Combine the pieces of excess dough from earlier, roll it out into a thin sheet, and place it on top of the loaf pan as a lid.
  • Cut off any excess dough with a knife and then use your thumb and index finger to squeeze portions of the dough together around the edges for a decorative crust. Cut out leaves and flowers with cookie cutters from the remaining pieces of excess dough and arrange them on top of the pie for decoration.
  • Brush an egg wash over the pastry dough, transfer the loaf pan to the oven, and bake for 2 hours.
  • Let the pie chill for about 15 minutes before serving.
