Flaming Honey Bourbon Pork Chops With Pears And Gorgonzola

There are a few special occasions in life that just call for an extra special meal. If you have an anniversary, birthday, or momentous celebration coming up, or just want to whip up something impressive for the holidays, then this is the recipe for you! We’re flambeeing pork chops in a honey bourbon sauce before adding pears, potatoes, green beans, and gorgonzola. All of these components come together beautifully – the old adage of the whole being greater than the sum of its parts has never been more true!

Flaming Honey Bourbon Pork Chops with Pears and Gorgonzola

Ingredients
  

  • 2 pork chops
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 2 tsp olive oil plus 2 tbsp
  • 1/2 tsp pepper
  • 2 tsp fresh minced rosemary
  • 2 tsp fresh minced thyme
  • 2 tbsp butter
  • 2 firm pears
  • 1/4 cup orange juice
  • 1/4 cup honey
  • 1/4 cup bourbon
  • 1 lemon juice from
  • 1 tbsp cold butter
  • 1 cup crumbled gorgonzola
  • 8 oz fingerling potatoes
  • 4 oz green beans
  • 3 oz bacon diced
  • 1 red onion chopped
  • salt & pepper to taste

Instructions
 

  • Finely chop the rosemary and thyme, and add the salt, pepper, and sugar. Mix everything together, spread the rub on a large cutting board, and rub the pork chops in the rub.
  • Heat some olive oil in a pan over medium heat and sear the pork chops on both sides.
  • Halve the pears and remove the core with a spoon. Add the halved pears to the pan with the pork chops.
  • Now add the bourbon to the pan and flambé the pork chops and pears.
  • Reduce the heat a bit and add the orange juice, lemon juice, and honey. Finish everything off by adding the butter to the pan along with the crumbled gorgonzola. Allow the sauce in the pan to thicken over low heat.
  • Boil the halved fingerling potatoes and green beans. Heat some olive oil in a pan and fry the potatoes in it. Then add the diced bacon and onions and continue to fry everything until the bacon gets crispy. Finally, add the green beans and season with salt and pepper.
