Marinated Grilled Chicken 3 Ways: BBQ, Garlic And Herb, And Curry Marinades

Ingredients
- 3 chicken leg quarters
- 3 dried red chili peppers (chile de árbol) for BBQ marinade
- 2 cloves garlic for BBQ marinade
- 2 tbsp tomato paste for BBQ marinade
- 3 tbsp BBQ sauce for BBQ marinade
- 3 tbsp honey for BBQ marinade
- 1 tbsp paprika for BBQ marinade
- 1 tbsp cayenne pepper for BBQ marinade
- 4 tbsp dark beer for BBQ marinade
- 3 tbsp vegetable oil optional, for BBQ marinade
- 3 oz fresh parsley for Garlic & Herb marinade
- 1 oz fresh oregano for Garlic & Herb marinade
- 2 tbsp lime juice for Garlic & Herb marinade
- 1 jalapeño, diced for Garlic & Herb marinade
- 1 clove garlic for Garlic & Herb marinade
- 1-2 tbsp olive oil for Garlic & Herb marinade
- 2 tbsp white wine vinegar optional, for Garlic & Herb marinade
- 2/3 cup Greek yogurt for Curry marinade
- 2 tbsp lime juice for Curry marinade
- 3 tbsp vegetable oil for Curry marinade
- 1-2 tbsp curry powder for Curry marinade
- 1 tbsp ground cumin for Curry marinade
- 2 tbsp parsley or cilantro, finely chopped for Curry marinade
- 1 clove garlic, minced for Curry marinade
- 2 tbsp sweet chili sauce for Curry marinade
Instructions
- Grind the pepper, salt, dried chili peppers, and garlic cloves with a mortar and pestle. Then add the rest of the ingredients and mix well. If the marinade seems a little too thick, you can add a bit of vegetable oil to thin it out. Transfer the marinade to a freezer bag.
- Put all the ingredients in a tall container and puree until smooth (you can also add white wine vinegar to taste). Transfer the marinade to a freezer bag.
- Add all the ingredients to a bowl and mix until combined. Transfer the marinade to a freezer bag.
- Skin the chicken leg quarters and remove the bones. Add the meat to each freezer bag, seal the bags, and knead them carefully until the chicken meat is completely covered in marinade. Refrigerate the marinated meat in the freezer bags for at least 3-4 hours, or preferably overnight.
- Grill the marinated chicken on both sides.
- Serve the BBQ marinated-chicken as a delicious, smoky sandwich!
- Serve the garlic and herb-marinated chicken with your favorite BBQ sauce!
