There’s nothing quite as versatile, beloved, and tasty as the potato. Being one of the largest food crops in the world, it’s no wonder there’s an endless number of recipes and variations. But in terms of popularity, there’s a competitor that comes with an equally large variety of flavors: the pizza. If you ever find yourself trying to decide between these two favorites, you can rest easy! With this recipe, potatoes and pizza finally come together.
Potato Breakfast Pizza with Prosciutto & Mushrooms

Ingredients
- 1-2 large potatoes
- 2 tbsp parmesan
- 1/3 cup tomato sauce
- 1 tsp oregano
- 1 mushroom
- 4 oz mozzarella
- 1 egg
- 3 slices prosciutto
- to taste pepper
Instructions
- Preheat your oven to 200°C (392°F). Slice the potatoes into thin rings and arrange them in a circular pattern on a baking sheet.
- Sprinkle the potato rings with parmesan and bake for 10 minutes until they start to crisp up.
- Spread the tomato sauce over the baked potato rings. Add oregano, sliced mushroom, mozzarella, and prosciutto. Crack an egg in the center.
- Bake for another 10 minutes until the cheese is melted and the egg is cooked to your liking. Garnish with pepper and serve hot.
