There’s nothing like a piece of hot apple pie on a cold and dreary afternoon, but when you’re eating that many calories in one go, the sugar guilt can be real. If you want that same great taste, but don’t want to worry about how you’ll fit into your pants tomorrow morning, try this healthier alternative that’s twice as nice!

Mini Baked Apple Pies

A healthier alternative to traditional apple pie, perfect for cold days.

Ingredients
  

  • 2 apples
  • 1/3 cup chopped pecans
  • 1 tbsp butter
  • 2 tbsp brown sugar
  • 1 tbsp bread crumbs
  • 1/4 cup sugar
  • 3/4 stick cold butter, cut into cubes
  • 1 1/4 cups flour
  • 1 egg
  • 1 pinch salt
  • 1 whisked egg for the egg wash

Instructions
 

  • Mix the shortcrust pastry ingredients into a smooth dough, place the dough ball in a bowl and cover with plastic wrap, and refrigerate for 1 hour. Once the dough has nearly finished chilling, preheat the oven to 350°F, cut off the tops of the apples, and remove the cores.
  • Hollow out the insides of the apples and place the contents in a bowl.
  • Add the chopped pecans, cubed butter, brown sugar, and bread crumbs to the bowl and mix everything together.
  • Fill the apples with the apple sugar mixture.
  • Roll out the shortcrust pastry and cut out 2 circles that are slightly wider than the apple bottom. Place the dough circles on a sheet pan lined with parchment paper and place the stuffed apples on top of the dough.
  • Cut the rest of the shortcrust pastry into strips and weave them together to create a lattice pie crust top.
  • Cut out 2 equally-sized circles that are slightly larger than the top of the apple and place them on top of the apples. Brush the egg wash over the lattice pie crusts and bake the apple pies for 25 minutes.
