Low-Carb Cauliflower Pizza Crust

But now you can have your pizza and eat it too, thanks to this delicious low-carb option that swaps a wheat crust for a cauliflower one!

Ingredients
  

  • 1 head cauliflower
  • 0.25 cup grated parmesan
  • 1 clove garlic, minced
  • 2 eggs
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 14 oz crushed tomatoes ½ can
  • 1 tsp sugar
  • 1 tsp tomato paste
  • 0.33 cup olive oil
  • 1 ball mozzarella or 1 cup shredded mozzarella
  • 3 mini sweet peppers
  • 0.5 cup sliced mushrooms
  • 0.25 cup sliced red onion
  • 0.25 cup sliced black olives
  • 0.25 cup sliced pepperoncini

Instructions
 

  • Preheat the oven to 350°F and break the cauliflower up into small pieces.
  • Place the cauliflower in a bowl, cover, and microwave on medium-high for 10 minutes or until the pieces are soft. Let the cauliflower cool and then wrap the pieces in a clean towel.
  • Squeeze the towel and drain the liquid from the cauliflower.
  • Season the cauliflower with paprika, oregano, salt, and pepper, and mix with the parmesan, garlic, and eggs until a dough forms.
  • Press the dough out in the shape of a pizza on a sheet pan lined with parchment paper and cook for 15 minutes.
  • Meanwhile, prepare the pizza sauce by pureeing the crushed tomatoes, sugar, tomato paste, and olive oil. You can also prepare the pizza toppings.
  • Spread the pizza sauce over the cauliflower crust, top with mozzarella cheese, mini sweet peppers, mushrooms, onions, olives, and pepperoncini, and cook for 20 minutes.
