Chocolate pudding is a favorite childhood snack, and for good reason. But instead of eating it out of a cup or bowl, why not try it in a beautiful bundt cake form? And to make it even better, top it all off with fruity jello and fresh cherries for the ultimate dessert!

Chocolate Cherry Jello Bundt Cake

Ingredients
  

  • 14 fl oz cherry juice
  • 6 sheets gelatin (or 6 tsp unflavored gelatin powder)
  • 8 oz cherries
  • 1 vanilla bean pod
  • 1 cinnamon stick
  • 44 fl oz heavy whipping cream
  • 1 vanilla bean caviar from 1 vanilla bean pod
  • 8 oz sugar
  • 1 tsp salt
  • 4 oz cocoa powder
  • 7 fl oz water
  • 13 sheets gelatin (or 1 tbsp unflavored gelatin powder)

Instructions
 

  • Halve and core the cherries. Rinse a bundt pan with water and distribute the cherry halves around the damp pan, making sure not to crowd them.
  • Scrape the vanilla bean caviar out of the vanilla bean pod and set it aside for later. Heat the cherry juice, cinnamon stick, and vanilla bean pod in a saucepan over medium heat. Let the juice cool to approximately 150°F. Meanwhile, soak the gelatin in cold water for about 5 minutes, and then squeeze it out and dissolve it in the warm cherry juice. Remove the vanilla bean pod and cinnamon stick from the cherry juice and pour the liquid over the cherries in the bundt pan. Refrigerate the pan for at least 1½ hours.
  • Meanwhile, prepare the chocolate pudding. Place the gelatin sheets in a bowl of water and let them soak. Gently mix the cocoa powder with hot water until a smooth paste forms. Heat the heavy whipping cream, vanilla bean caviar, sugar, and salt in a large pot over medium heat. Stir in the cocoa powder paste until mixed together.
  • Remove the gelatin from the water, squeeze it out, and let it dissolve in the chocolate cream mixture. Purée the pudding for about 30 seconds for an extra creamy treat.
  • Pour the still liquid chocolate pudding over the cherry jello in the pan and refrigerate overnight. To easily remove the pudding cake from the pan, carefully dip the pan in lukewarm water for max. 5 seconds. Then place a plate over the top, flip the entire thing over, and gently pull the pan up off of the cake.
