Pancakes are the perfect way to kick off any day, and hey, the bigger the better, right? That’s what we thought too! After all, why settle for one measly pancake when you can have one gigantic pancake? And why settle for one when you can have two? Is it a pancake? Is it a cake? So many questions that you’ll only be able to answer after you’ve tried this fluffy dessert sandwich for yourself!

Nutella Banana Pancake Cake & Honey Plum Cream Pancake Cake

Equipment

  • 10-inch frying pan

Ingredients
  

  • 8 oz flour
  • 2 oz sugar
  • 4 fl oz oil
  • 2 tbsp baking powder
  • 4 eggs
  • 7 fl oz milk
  • 4 bananas
  • 6 tbsp Nutella
  • powdered sugar
  • 8 plums
  • 3.5 oz cream cheese
  • 2 tbsp honey
  • 2 oz mixed nuts, chopped
  • cinnamon & sugar

Instructions
 

  • Combine the batter ingredients (flour, sugar, oil, baking powder, eggs, milk) and mix until smooth.
  • Halve 2 bananas lengthwise, place them face down in a 10-inch frying pan, and pour the batter over the bananas so that they are fully covered, but you can still see them. Put a lid on the pan and cook on low heat for about 20 minutes. Once the top is firm to the touch, remove the pancake from the pan and set aside. Repeat to create the second giant pancake. Put the first XXL pancake face up on a plate and brush with Nutella. Place the second XXL pancake face down on the Nutella. Sprinkle with powdered sugar.
  • Halve 4 plums, place them face down in a 10-inch frying pan, and pour the batter over so that they are fully covered, but you can still see them. Put a lid on the pan and cook on low heat for about 20 minutes. Once the top is firm to the touch, remove the pancake from the pan and set aside. Repeat with the remaining ingredients for a second giant pancake. Combine the cream cheese, honey, and mixed nuts, and spread over the smooth side of the first plum pancake. Top with the second plum pancake and garnish with cinnamon and sugar.
