Equipment

  • Parchment paper
  • Wide glass

Ingredients
  

  • 2 cups flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 0.5 tsp dry yeast
  • 0.67 cup lukewarm water
  • 1 tbsp olive oil
  • 1 tomato sliced
  • 1 fresh mozzarella ball sliced
  • 7 basil leaves
  • 7 mini Babybel cheese wheels cut in half horizontally
  • 1 slice ham cut into 7 circles
  • 1 onion sliced
  • 1 apple sliced into rings
  • 21 raisins
  • cream cheese
  • cinnamon sugar

Instructions
 

  • Combine the ingredients for the pizza dough and knead until a smooth dough forms. Form the dough into a ball, place it inside a bowl, cover the bowl, and let sit in a warm place for 1 hour. Repeat the process 2 more times for a total of 3 dough balls — 1 for each mini calzone recipe.
  • Cut the first dough ball in half and roll out 1 of the halves. Arrange 7 tomato slices on the dough, cover each tomato slice with a basil leaf and slice of mozzarella, and season with salt and pepper. Roll out the other dough half and lay it on top. Gently press the dough down around the caprese mounds and use a wide glass to cut them out of the dough. Place the mini calzones on a baking tray lined with parchment paper, transfer the pan to a preheated oven, and cook at 350°F for 12 minutes.
  • Cut the second dough ball in half and roll out 1 of the halves. Cut 7 mini Babybel cheese wheels in half horizontally, cut 7 equally-sized circles out of a large slice of ham, and cut 7 equally-sized onion slices. Arrange 7 of the cheese halves on the dough and cover each piece of cheese with a ham circle, onion slice, and the other cheese half. Roll out the other dough half and lay it on top. Gently press the dough down around the ham & cheese mounds and use a wide glass to cut them out of the dough. Place the mini calzones on a baking tray lined with parchment paper, transfer the pan to the warm oven, and cook at 350°F for 12 minutes.
  • Cut the third dough ball in half and roll out 1 of the halves. Cut 7 thin, round slices from the apple and use a round cutter to remove the outer sections with the peel. Use a smaller cutter to remove the cores so that you are left with 7 apple rings. Arrange the apple rings on the dough, pipe a dollop of cream cheese into the center of each apple ring, and top each dollop with 3 raisins and a sprinkle of cinnamon sugar. Roll out the other dough half and lay it on top. Gently press the dough down around the apple pie mounds and use a wide glass to cut them out of the dough. Place the mini calzones on a baking tray lined with parchment paper, transfer the pan to the warm oven, and cook at 350°F for 12 minutes.
