Ingredients
  

  • 6 eggs, separated
  • 1 pinch salt
  • 7 oz sugar
  • 3.5 oz flour
  • 3.5 oz corn starch
  • 1 pack vanilla pudding powder
  • 1 tsp baking powder
  • 17.5 oz mango or apricot jam
  • 10.5 oz buttercream frosting
  • 3.5 oz white fondant
  • 24 sheets gelatin
  • 2 tbsp sprinkles
  • 10 food coloring to color the gelatin

Instructions
 

  • Separate the eggs and beat the egg whites with a pinch of salt until stiff. Gradually add the sugar and continue beating until the mixture is glossy. Fold in the egg yolks one at a time.
  • In a separate bowl, mix the flour, corn starch, vanilla pudding powder, and baking powder. Gradually fold the dry ingredients into the egg mixture.
  • Pour the batter into a greased and floured cake pan. Bake at 350°F (175°C) for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
  • Cut the cake horizontally into two layers. Spread the mango or apricot jam on the bottom layer and place the top layer back on. Cover the entire cake with buttercream frosting and smooth it out. Roll out the white fondant and cover the cake with it.
  • Inflate the balloons and attach them to the wooden skewers. Dissolve the gelatin sheets in water and add food coloring. Dip the balloons into the gelatin mixture and let them dry. Once dry, remove the balloons and place the gelatin balloons on top of the cake. Add sprinkles for extra decoration.
