Rack of Lamb with Risotto

Ingredients
  

  • 3 lbs rack of lamb
  • 2 cloves garlic, chopped
  • 1 sprig rosemary, chopped
  • 3.5 fl oz vegetable oil
  • to taste salt and pepper
  • 9 oz risotto rice
  • 1 tbsp butter
  • 2 oz red onion, diced
  • 1.33 tbsp white wine
  • 10 fl oz vegetable broth
  • 3.5 oz parmesan cheese, grated
  • 3.5 oz chanterelle mushrooms, fried
  • 2 oz cherry tomatoes
  • 1 tbsp chopped parsley

Instructions
 

  • Preheat your oven to 375°F (190°C). Chop the garlic and rosemary.
  • Rub the rack of lamb with garlic, rosemary, vegetable oil, salt, and pepper.
  • Form the rack of lamb into a crown shape and tie it with roasting cord. Place it in a cake pan and roast for 45-60 minutes.
  • While the lamb is roasting, prepare the risotto. Melt butter in a pan, add diced red onion, and cook until translucent. Add risotto rice and white wine, stirring constantly. Gradually add vegetable broth, allowing the rice to absorb the liquid. Stir in grated parmesan cheese, fried chanterelle mushrooms, cherry tomatoes, and chopped parsley.
  • Remove the lamb from the oven and let it rest for a few minutes. Fill the center of the lamb crown with the prepared risotto and serve.
