As they like to think they’re the main attraction, chicken breast filets are usually kept apart from their accompaniments on the plate. Oven-Roasted Vegetables with Chicken

Ingredients
- 500 g chicken breast
- 1 broccoli
- 1 red onion
- 1 pepper
- 1 zucchini
- 200 g cherry tomatoes
- 30 ml olive oil for dressing
- 20 ml white balsamic vinegar for dressing
- 70 ml white wine for dressing
- 0.5 tsp paprika for dressing
- 2 tbsp honey for dressing
- 0.5 tsp salt for dressing
- 0.5 tsp pepper for dressing
- 0.5 tsp ground cilantro for dressing
- 1 garlic clove grated, for dressing
- 1 small piece of ginger grated, for dressing
- 0.5 tsp thyme for dressing
- 1 tsp rosemary for dressing
Instructions
- Mix together the olive oil, white balsamic vinegar, white wine, paprika, honey, salt, pepper, ground cilantro, grated garlic clove, grated ginger, thyme, and rosemary.
- Chop up the broccoli, onion, pepper, and zucchini into small pieces. Put everything in a large bowl with the cherry tomatoes and pour in the dressing.
- Cut the chicken breast into small pieces and add it to the bowl with the veggies and dressing. Mix everything well.
- Spoon the contents of the bowl into a casserole dish and bake it in the oven at 320°F for 15 minutes.
