Beef and Feta Pan Bake
A filling lunchtime recipe with ground beef, feta, and a mix of spices.
Equipment
- Large Pan
- Oven
Ingredients
- 1 oil for frying
- 1 chopped onion
- 2 chopped garlic cloves
- 0.5 chopped red pepper
- 3.4 fl oz tomato sauce
- 26.5 oz ground beef
- 0.5 cup breadcrumbs
- 0.5 tbsp cayenne pepper
- 1 tsp cumin
- 1 tbsp chopped cilantro
- 8 eggs
- 3.4 fl oz milk
- 7 oz feta
- 1 salt and pepper
- 2 tbsp tomato paste
- 0.33 cup honey
- 1 tsp chili sauce
Instructions
- Sweat the onion, garlic and pepper in hot oil in a large pan (ideally, a cast iron one), before adding the tomato sauce. Turn the heat up and reduce the sauce a little bit, before setting it to one side.
- In a large bowl, mix the ground beef with the breadcrumbs, cayenne pepper, cumin, cilantro, two of the eggs, milk, half the feta and some salt and pepper. Then add the sauce on top of that and mix the meat thoroughly with all the ingredients.
- Transfer the seasoned meat back to the pan and press it down well. Next, use a spoon to press six impressions into it — one in the middle with the other five forming a circle around it. Then bake the pan in the oven for 20 minutes at 340°F.
- Stir the tomato paste, honey and chili sauce together and then spread this over the cooked ground beef.
- Slide an egg into each of the six holes. Crumble and sprinkle the rest of the feta over the contents of the pan before you bake it for another 8 minutes at 360°F. After that, sprinkle with fresh cilantro, according to your preference.
