1. Cinnamon Sugar Palmiers

You’ll Need:

  • 1 puff pastry sheet
  • 3 oz sugar
  • 1 tsp cinnamon

Here’s How:

1.1 Preheat the oven to 400°F and mix the cinnamon and sugar together. Spread half of it on your work surface, place the puff pastry sheet on top, and sprinkle the rest of the cinnamon sugar mixture over the puff pastry.

1.2 Roll a rolling pin over the puff pastry to press the cinnamon sugar into the dough.

1.3 Roll the puff pastry up from both of the long sides until they meet in the middle. Refrigerate for 30 minutes.

1.4 Cut the puff pastry roll into ¼-inch thick slices.

1.5 Place the palmiers on a sheet pan lined with parchment paper and bake for 12 minutes.

2. Pastry Clam with White Chocolate Pearl

You’ll Need (for 3)

  • 1 large, clean seashell
  • 1 sheet of puff pastry
  • 3 white chocolate balls
  • 1 beaten egg
  • powdered sugar

Here’s How:

2.1 Preheat the oven to 350°F. Lay the clean seashell on the puff pastry and trace around it with a knife, leaving a little bit of extra space around the edges.

2.2 Press the dough cutout into the shell and refrigerate for 10 minutes.

2.3 Brush the egg wash over the dough.

2.4 Place a white chocolate ball on an uncut area of the puff pastry sheet and cover it with the dough shell.

2.5 Gently press the shell on the puff pastry and cut it out with a knife.

2.6 Carefully remove the filled shell and brush it with the egg wash. Prepare the other two shells, place them on a sheet pan lined with parchment paper, and cook for 15 minutes or until golden brown.

2.7 Sprinkle some powdered sugar over the pastry shells.

You’ll Need (for 6):

  • 3 puff pastry sheets
  • 1 small bowl or cookie cutter (Ø 4 inch)
  • 1 thin shot glass or cookie cutter (Ø 1 inch)
  • oil for frying
  • melted chocolate (dark and white)
  • colorful sprinkles
  • chopped nuts

3.1 Coat the first puff pastry sheet with a little water, place the second sheet on top and coat it with water, and finally place the third sheet on top.

3.2 Cut the donuts out of the puff pastry with the bowl and shot glass (or cookie cutters) and freeze for 10 minutes. Then fry the donuts in a pot of hot oil until golden brown.
