Potatoes are the perfect addition to any meal, and even make a great meal all by themselves. But if you feel like you always make the same old thing, here are 3 innovative potato recipes to get you out of your spud rut!

1. Fried Potato Sandwiches

You’ll Need (for 2):

  • 1 large potato
  • 2 eggs
  • 1 cup bread crumbs
  • ⅓ cup grated parmesan cheese
  • salt & pepper to taste
  • 4 slices of Gouda cheese, divided
  • 6 slices of salami, divided

Here’s How:

1.1 Peel the potato, prick a few holes in it, and microwave on high for 4-5 minutes. Let the potato cool and cut it lengthwise into 4 even slices. 

1.2 Crack the eggs into a bowl and whisk well. Combine the bread crumbs, parmesan cheese, salt, and pepper in a second bowl. Dip the 4 potato slices in the whisked eggs and then dredge them in the bread crumb mixture.

1.3 Heat some olive oil in a pan over medium heat. Place 2 breaded potato slices in the pan and fry on both sides. Place 2 slices of Gouda cheese and 3 slices of salami on 1 of the fried potato slices and top with the other fried potato slice. Leave the fried potato sandwich in the pan until the cheese begins to melt.

1.4 Repeat Step 3 with the remaining breaded potato slices and fillings for a second fried potato sandwich. If you prefer an oven instead of a frying pan, bread the 4 potato slices, assemble the 2 sandwiches, and cook them in a preheated oven at 350°F for 15 minutes.

2. Potato Egg Nests

You’ll Need (for 4):

  • 1 lb potatoes, peeled and cooked
  • 1 cup bread crumbs
  • 3 tbsp bacon bits
  • 1 cup shredded mozzarella
  • 1 tbsp chopped parsley
  • salt & pepper to taste
  • 4 egg yolks
  • bread crumbs to garnish

Here’s How:

2.1 Mash the potatoes, season with salt and pepper, and mix in the bread crumbs, bacon, parsley, and about half of the cheese. Make 4 potato patties from the mixture, place them on a baking tray lined with parchment paper, and sprinkle bread crumbs on top.

2.2 Press a small glass into the center of each potato nest.

2.3 Spread the rest of the cheese in the holes and add 1 egg yolk to each potato nest center. Transfer the baking tray to a preheated oven and cook at 350°F for 15 minutes.

3. Stuffed Duchess Potatoes

You’ll Need (for 4):

  • 1 lb potatoes, peeled & cooked
  • 1 cup bread crumbs
  • ½ cup grated parmesan cheese
  • 2 egg yolks
  • 1 tbsp parsley
  • salt, pepper & nutmeg to taste
  • 4 mozzarella pearls
  • 2 oz bacon, diced

Here’s How:

3.1 Line a baking tray with parchment paper. Mash the cooked potatoes, add the bread crumbs, parmesan, egg yolks, and parsley, season with salt, pepper, and nutmeg, and mix well. Spoon the potato mixture into a piping bag, pipe 4 circles onto the baking tray, and smooth the surfaces with a spoon.

3.2 Place a mini mozzarella pearl in the center of each potato circle and sprinkle diced bacon around the cheese.

3.3 Pipe the rest of the potato mixture in the shape of a tower around the mozzarella pearls and bacon.

3.4 Transfer the baking tray to a preheated oven and cook at 375°F for 15 minutes.
