It’s said that the 4th Earl of Sandwich, an 18th-century English nobleman, had his meat served between two slices of bread so that his fingers wouldn’t get sticky while playing cards. Very clever — his eagerness to gamble thus created the practical snack that we know and love today. Yet for this recipe, we’ve done away with the aristocratic card shark’s bread to give his lunchtime classic a fresh new look. The results are irresistible, and even the pickiest of sandwich traditionalists will be coming back for more!
Potato Sandwich with Ham and Mozzarella

Ingredients
- 3 large baking potatoes long
- 1 tbsp olive oil
- salt and pepper
- 3 slices mozzarella
- 1/4 cup red pesto
- 3 slices Serrano ham
- 1/4 cup arugula
- balsamic vinegar
Instructions
- Bake the potatoes, cut them in half, and carefully hollow them out using a spoon. Cut away the end pieces before brushing the insides of the potato halves with olive oil. Season them with salt and pepper. Place the mozzarella in the hollowed out potato halves and bake them for four minutes at 300°F.
- Spread the pesto and fold the ham onto three of the halves before placing the arugula on top. Drizzle some olive oil and balsamic vinegar on top of the salad.
- Place the remaining potato halves on top of the garnished ones. Hold them in place using cocktail sticks and cut them into bitesize portions.
