Bacon Cheddar Potato Skins
Equipment
- Oven
- Frying Pan
- Baking tray
Ingredients
- 6 slices bacon
- 1 tbsp barbecue sauce
- 3 baked potatoes
- 1/2 cup yogurt
- 2 tbsp chives chopped
- 3.5 oz cheddar grated
- 2 oz mozzarella grated
- salt and pepper to taste
Instructions
- Coat the bacon strips with barbecue sauce and fry them until crispy on both sides.
- Bake the potatoes in an oven at 390°F for 45 minutes. Once they've cooled, cut them in half and remove the soft insides, without damaging the skins.
- Mash and mix the potato insides with the yogurt, chives, and cheddar. Season the mixture with salt and pepper, tear or chop the bacon into small pieces then add that too.
- Fill the hollowed-out potato skins with the mixture, place them in a baking tray and sprinkle mozzarella on top. Bake the potatoes in the oven for another 15 minutes at 350°F.
