A fluffy, chilled dessert — and perfect alternative to tiramisu

No doubt about it, tiramisu is tasty. Especially if you make the real thing, complete with coffee and fresh mascarpone. But since it’s usually done with liqueur nowadays, not to mention the coffee, it’s not really appropriate for kids.

Equipment

  • Casserole Dish
  • Electric mixer

Ingredients
  

  • 1 package chocolate butter cookies
  • 2 1/4 cups cream
  • 1/2 cup sugar
  • 16 oz cream cheese
  • 1/2 tsp salt
  • 3 cups milk
  • 6 oz pudding mix
  • 2-3 tbsp cocoa

Instructions
 

  • Whip the cream together with 2 tbsp sugar until stiff peaks form.
  • With an electric mixer blend the cream cheese, salt, 1/4 cup milk, and the rest of the sugar. Gently fold in the cream.
  • Mix the rest of the milk with the pudding powder until it's creamy.
  • Place an even layer of the butter cookies into a casserole dish and then spoon in a layer of the cream mix. Over that carefully coat a thin layer of the chocolate pudding mix. Repeat two more times, only with no pudding layer on top.
  • Sprinkle the top with cocoa powder and slice into even pieces.

If you can keep your fingers out of this treat before serving time you definitely deserve seconds. Hide it from the kids or it’ll disappear before you can say “chocolate icebox dessert.” So pull out your electric mixer and casserole dish and get to work!
