A casual dining classic gets a tasty makeover: Pizza Potato Skins

Remember when potato skins were all the rage and every family restaurant had them on the menu? It was almost the best thing to happen to the potato since the French fry. Table after table of diners dipping their gooey cheddar and bacon covered skins in cool cream cheese and chives… those were the days, right? Now how long has it been since you’ve had one?

Pizza Potato Skins

Equipment

  • Oven

Ingredients
  

  • 1 small to medium potato boiled
  • 1 tsp sour cream
  • salt and pepper
  • 2 tsp shredded mozzarella
  • 2 tsp salami cut into small squares
  • 1 tsp grated parmesan

Instructions
 

  • Cut each potato in half and spoon out a good portion of the potato, leaving the skin on and enough potato still inside to keep it firm.
  • Mix the removed white of the potato with sour cream in a bowl and season well. Then replace into the hollowed out potato shell.
  • Cover the potato halves with mozzarella and salami, then sprinkle with parmesan.
  • Bake at 340°F for about 10 minutes until the cheese melts and turns golden brown.

Notes

These are just the basics, but everyone has their favorite pizza toppings, so feel free to add yours. Perhaps some oregano, onions, olives, maybe even a healthy dose of minced garlic? Suddenly, the potato skin is back and better than ever — enjoy!
