1. Tortilla Boats

Difficulty Level: Moderate
Ingredients:
- 10 extra large corn tortillas
- 2 red onions, diced
- ½ cup guacamole
- 2 tomatoes, diced
- 12 oz taco meat
- 1 can of corn
- 1 cucumber, diced
- ½ cup sour cream
- 1 can of kidney beans
- 1 jar of jalapeño slices
- shredded lettuce & queso to garnish
Instructions:
Hang the tortillas over the bars of the oven rack and cook at 275°F for 10 minutes. Place the curved tortillas on a clean work surface, secure them with a fork, and top with shredded lettuce. Place parchment paper on the bottom of an 8-inch springform pan and layer ingredients in the following order: red onions, guacamole, tomatoes, ⅓ of the taco meat, corn, cucumbers, sour cream, ⅓ of the taco meat, kidney beans, jalapeños, ⅓ of the taco meat. Push a 2-oz tall shot glass down through the layers until you reach the bottom and then pull it out with the layered ingredients inside the shot glass. Slide the contents of the shot glass out into one of the tortillas and top with queso. Repeat 9 more times to fill the other tortilla boats.
2. Tortilla Dome

Ingredients:
- 2 extra large flour tortillas
- ¼ cup sour cream, divided
- 1 cup shredded lettuce, divided
- 4 oz taco meat, divided
- ¼ cup corn, divided
- ¼ cup kidney beans, divided
- ⅔ cup queso, warmed
- ½ cup guacamole
- ½ cup sour cream
- ½ cup salsa
Instructions:
Spread 2 tablespoons of sour cream over each tortilla and top half of each tortilla with shredded lettuce, taco meat, corn, and kidney beans. Roll the tortillas up into tight logs and cut each log into 8-9 equally-sized pieces. Line the bottom and sides of a 7-inch bowl with the stuffed tortilla pieces, pour the warm queso into the bowl, and spread it over the stuffed tortilla pieces. Add the guacamole, sour cream, and salsa to the bowl, making sure to smooth out each layer. Flip the tortilla dome over onto a plate and gently remove the bowl before serving.
3. Tortilla Wrap

Ingredients:
- 1 extra large corn tortilla
- shredded cheddar cheese
- sliced avocado
- taco meat
Instructions:
Make a cut half-way up the center of the tortilla. Top one quadrant with shredded cheddar cheese, one quadrant with avocado slices, and one quadrant with taco meat. Fold each quadrant over itself and grill the tortilla wrap in a panini press or sandwich maker for 5-10 minutes until golden brown on both sides.
4. Seasoned Tortilla Chips
Yield: 1 serving

Cooking Time: 10 minutes
Difficulty Level: Easy
Ingredients:
- 2 extra large corn tortillas
- 1 tbsp paprika
- 2 tsp ground cumin
- 2 tsp dried cilantro
- 2 tsp salt
Instructions:
Place the tortillas on top of each other, fold them into a triangle, and cut this triangle into 3 smaller triangles. Place the tortilla triangles on a baking tray, transfer the baking tray to a preheated oven, and cook at 325°F for 10 minutes. Combine the paprika, ground cumin, dried cilantro, and salt and toss the tortilla chips in the seasoning immediately after they come out of the oven.
