Whether you prefer sweet or savory, all 4 of these fun doughs feature a different vegetable as the main ingredient, so there’s no need to feel guilty about your delicious afternoon snack!
1. Tomato Pinwheels
Yield: 8-10
Prep Time: 15 minutes
Cooking Time: 15 minutes
Difficulty Level: Moderate
You’ll Need:
- 14 oz whole peeled tomatoes
- 2 tsp tomato paste
- 2 tsp dry yeast

2½ cups flour
- 1 tsp fennel seed
- ½ tsp salt
- ½ cup basil pesto
- ¼ cup grated parmesan cheese
Here’s How:
1.1 Puree the whole peeled tomatoes and tomato paste, stir in the dry yeast, and let the mixture stand for 15 minutes. After 15 minutes, add the flour, fennel seed, and salt and knead by hand for about 10 minutes until a smooth dough forms. Place the tomato dough ball in a glass bowl, cover with plastic wrap, and let rise in a warm place for 35-40 minutes until the dough doubles in size.
1.2 Roll the tomato dough out into a thin rectangle, spread basil pesto over it, and sprinkle grated parmesan on top (omit the parmesan for a vegetarian dish).
1.3 Roll the tomato dough up into a log and let rise, covered, in the fridge for 15 minutes.
1.4 Cut the tomato dough log into 8-10 equal pieces and let rise, covered, for 40 minutes.
1.5 Place the tomato pinwheels on a baking tray lined with parchment paper, transfer the baking tray to a preheated oven, and cook at 400°F for 15 minutes.
2. Beet Cupcakes
Yield: 6

Cooking Time: 15 minutes
Difficulty Level: Moderate
You’ll Need:
- 7 oz cooked beets
- ⅔ cup milk
- 1 tsp rice vinegar
- 1 cup sugar
- 1 tsp red food coloring
- ⅓ cup cream cheese
- 1 egg
- ⅓ cup vegetable oil
- 2¼ cups flour
- 1 pinch of salt
- 1 tsp baking powder
- ½ tsp baking soda
Here’s How:
2.1 Add the ingredients to a blender and puree until smooth.
2.2 Grease a 6-cup muffin pan and divide the beet cupcake batter between the molds. Transfer the muffin pan to a preheated oven and cook at 325°F for 15-25 minutes, or until cooked through.
2.3 Let the beet cupcakes cool and decorate with your favorite frosting and freeze-dried raspberries.
3. Spinach Pasta
Yield: 2 servings
Prep Time: 20 minutes
Cooking Time: 4 minutes
Difficulty Level: Moderate
You’ll Need:
- 1¼ cups flour
- 1 cup semolina flour
- ½ tsp salt
- 8 oz baby spinach
- ¼ cup water
- 2 tbsp olive oil
Here’s How:
3.1 Add the flour, semolina flour, and salt to a bowl and mix well. Pour the mixture out onto your work surface and make a well in the center. Sauté the spinach, add the water, and puree the mixture. Pour the pureed spinach and olive oil into the well in the dry ingredients and knead the dough by hand for 5 minutes. Cover the spinach dough ball and let rest for 1 hour.
3.2 Roll the spinach dough out into a rectangle and cut the dough lengthwise into ½-inch-thick noodles. Boil the spinach noodles in salted water for about 4 minutes.
3.3 Garnish the spinach pasta with your favorite toppings and infused olive oil before serving.
4. Bell Pepper Buns
Yield: 8-10
Prep Time: 15 minutes
Cooking Time: 38 minutes
Difficulty Level: Moderate
You’ll Need:
- 2 yellow bell peppers
- ¾ cup flour
- 1 tsp turmeric
- 1 scallion, sliced
- crushed red pepper & salt to taste
Here’s How:
4.1 Roast the bell peppers in a preheated oven at 400°F for about 30 minutes. Remove the skin and puree the roasted peppers. Add the flour, turmeric, and scallions to the bell pepper puree, season with crushed red pepper and salt, and knead the dough by hand for about 5 minutes. Let the bell pepper dough rise for 30 minutes and then divide it into 8-10 equal pieces.
4.2 Shape the bell pepper dough pieces into flat buns and place them on a baking tray lined with parchment paper. Transfer the baking tray to a preheated oven and cook at 350°F for 8 minutes.
4.3 Garnish the bell pepper buns with your favorite vegetables and seasonings and serve with dip.
