1. Potato Leaf Patty
Yield: 2
Prep Time: 15 minutes
Cooking Time: 10 minutes

Ingredients:
- 1 medium potato
- 1 lb ground beef
- 1 onion, diced
- 1 egg
- salt & pepper to taste
Instructions:
Peel the potato, cut it in half lengthwise, and use 2 knives to carve a leaf pattern in each potato half, as shown in the video. Combine the ground beef, onion, egg, salt, and pepper and divide the mixture in half. Place 1 portion of the ground beef mixture in a small bowl and press 1 of the carved potatoes into the ground beef, with the cut side facing up. Repeat with the other portion of ground beef and carved potato. Fry each potato leaf patty on both sides (starting with the potato side) in a pan over medium heat until the meat is cooked through.
2. Egg-In-A-Hole Potato Donut

Ingredients:
- 1 large potato
- 1 egg
- chopped parsley to garnish
Instructions:
Peel the potato and cut it in half lengthwise. Then make several equally-spaced incisions widthwise in each potato half and place them in lukewarm water for 1 hour to make them more malleable. Dry the soaked potatoes and use toothpicks to connect the 2 halves in the shape of a circle, as shown in the video. Fry the potato donut on both sides in a pan over medium heat, crack an egg into the center, cover the pan with a lid, and let cook until the egg has set. Garnish the egg-in-a-hole potato donut with parsley before serving.
3. Potato Stick Cups

Ingredients:
- 1 large potato
- 2 slices of bacon
- garlic herb butter to garnish
Instructions:
Peel the potato and cut it in half widthwise. Make several deep vertical and horizontal incisions in the surface of each potato half – the incisions should cut about halfway down – and soak the cut potatoes in lukewarm water for 1 hour to make them more malleable. Dry the soaked potatoes and wrap a slice of bacon around the bottom of each potato half. Fry the potato stick cups in hot cooking oil until crispy and golden brown and garnish with garlic herb butter before serving.
4. Fried Potato Pasta

Ingredients:
- 2 large potatoes
- 3 tbsp diced bacon
- 1 onion, diced
- salt & pepper to taste
- chopped parsley to garnish
Instructions:
Peel the skin off of the potatoes and then use a vegetable peeler to cut several long, thin potato noodles. Soak the potato noodles in lukewarm water for 1 hour to make them more malleable and then dry them. Heat some olive oil in a pan over medium heat and fry the potato noodles. Add the diced bacon and onion, season with salt and pepper, and fry until the bacon has cooked through. Garnish the fried potato pasta with parsley before serving.
