Whether you’re craving a nice juicy blue cheese-stuffed burger, snackable blue cheese steak sticks, apple & blue cheese pastries, or you’re ready for a little blue cheese-stuffed pepper action, these recipes are for you. Rich, tangy, tasty, and fresh off the grill, these dishes are all amazing ways to get your blue cheese fix any time of year!
1. Blue Cheese Juicy Lucy Burgers
Yield: 6

Ingredients:
- 1½ lbs ground beef
- salt & pepper to taste
- 12 oz blue cheese, divided
- 6 hamburger buns
- lettuce, tomatoes, onions & condiments to garnish
Instructions:
Season the ground beef with salt and pepper and divide the mixture into 6 even portions. Divide the blue cheese into 6 even portions, wrap a portion of ground beef around each portion of blue cheese, and shape each piece into a hamburger patty. Place the 6 blue cheese-stuffed hamburger patties on a preheated grill and cook for about 5 minutes on each side. Place the blue cheese juicy lucy burgers on hamburger buns and garnish with lettuce, tomatoes, onions, and condiments.
2. Blue Cheese Steak Sticks

Cooking Time: 15 minutes

Ingredients:
- 1 steak, cooked & cubed
- 4 oz blue cheese, cubed
- 2 sheets of pizza dough
Instructions:
Cut the pizza dough into 12 x 6-inch rectangles (you should have 2 rectangles in the end). Alternate the steak cubes and blue cheese cubes on skewers, preparing 5 skewers in total. Place 1 sheet of pizza dough on a preheated grill, place the 5 skewers on top, and press them down slightly so they dip down below the grill grid. Place the seconds sheet of pizza dough on top and let cook for 10-15 minutes until golden brown. Cut the finished product into 5 individual sticks before serving.
3. Blue Cheese Apple Pastries

Ingredients:
- yeast dough
- 2-3 apples, sliced
- 12 oz blue cheese, sliced
Instructions:
Brush vegetable oil over the inside of a heat-resistant mug and arrange 2 thick strips of yeast dough crosswise inside of the mug. Stack the apple slices and blue cheese slices inside the mug until you reach the top and then seal the dough strips at the top by twisting them together. Place the heat-resistant mug on a preheated grill and cook for 10-15 minutes until golden brown.
4. Blue Cheese-Stuffed Peppers

Prep Time: 10 minutes
Cooking Time: 25 minutes

Ingredients:
- 9 mini sweet peppers
- 6 oz blue cheese, cubed
- 2-3 tbsp mango chutney
- 2 eggs, whisked
- salt & pepper to taste
Instructions:
Stuff the mini sweet peppers with blue cheese cubes that have been dipped in mango chutney, place the stuffed mini sweet peppers on a skewer, and hang the skewer over a preheated grill. Season the whisked eggs with salt and pepper, pour the whisked egg mixture into each stuffed mini sweet pepper, and cook for 15-25 minutes.
