1. Bacon & Cheese Twists

You’ll Need:
- 1 puff pastry sheet
- 1 cup grated cheddar cheese
- ½ tsp cayenne pepper
- 5 strips of bacon
- 2 tbsp brown sugar + ½ tsp chopped rosemary
Here’s How:
1.1 Preheat the oven to 375°F. Unroll 1 puff pastry sheet onto your work surface, grate the cheddar cheese over ½ of the puff pastry dough, and sprinkle cayenne pepper over the cheese.
1.2 Fold the remainder of the puff pastry dough over the half covered in cheddar and lightly press down to seal the edges. Cover the top of the folded puff pastry dough with slices of bacon and use a pizza cutter to cut along the edges of each slice, creating 5 even strips of bacon-topped puff pastry dough.
1.3 Twist the puff pastry strips at both ends and place them on a baking tray lined with parchment paper. Stir the brown sugar and rosemary together and sprinkle the mixture over the bacon & cheese twists.
1.4 Transfer the baking tray to the oven and bake at 375°F for 25 minutes.
2. Cheesy Bacon Buns

You’ll Need:
- 1 puff pastry sheet
- 2 tbsp cream cheese
- 1 red onion, diced
- 2 tbsp chopped parsley
- 4 strips of bacon, diced
- 1 cup grated cheddar
- 1 whisked egg for the egg wash
Here’s How:
2.1 Preheat the oven to 375°F. Unroll 1 puff pastry sheet onto your work surface and spread cream cheese over most of the surface of the dough, leaving the upper edge uncovered. Sprinkle the diced red onion, chopped parsley, and diced bacon over the cream cheese, then grate the cheddar cheese directly on top. Roll the puff pastry sheet up lengthwise, forming it into a snug log.
2.2 Cut the roll into ¾-inch thick slices and transfer them to a baking tray lined with parchment paper, leaving enough space between each cheesy bacon bun to rise in the oven. Whisk an egg for the egg wash and brush it evenly over each bun.
2.3 Transfer the baking tray to the oven and bake at 375°F for 30 minutes.

3.1 Preheat the oven to 275°F. Grease the muffin pan and line each mold with a strip of bacon. Crack 1 egg into each mold and season with salt and pepper. Cover the muffin pan with aluminum foil and place it inside a large casserole dish filled with a shallow layer of water to make sure that the egg whites solidify.

- 30 strips of bacon
- 6 eggs, scrambled

Here’s How:
4.1 Preheat the oven to 350°F. Cover a plate with parchment paper, place 2 strips of bacon horizontally on the plate in the middle section, then place 1 strip of bacon on top vertically to the leftmost side of the horizontal pieces. Place 3 more slices of bacon horizontally over the vertical piece at the top, middle, and bottom of the vertical strip of bacon, making sure they don’t overlap with the first two pieces. Flip the first 2 horizontal strips to the left and place another vertical strip next to the first one. Continue to alternate flipping the horizontal strips of bacon, adding a new vertical piece each time. Weave the bacon using this technique until you form a complete square of bacon.
4.2 Cut off any excess bacon and parchment paper so that you are left with a woven circle of bacon the size of the plate.
4.3 Hang the woven circle of bacon on a wire rack, keeping the piece of parchment paper underneath. Repeat this process 2 more times with the rest of the bacon strips. Transfer the wire rack to the oven and bake at 350°F for 20 minutes.
4.4 Heat a skillet on the stove. Whisk the eggs, season them with salt and pepper, and pour the egg mixture into the heated skillet. Grate the cheddar cheese directly into the skillet and scramble the eggs until they are cooked all the way through. Remove the bacon tacos from the oven, fill them with scrambled eggs, and garnish with chopped chives.
