One of the great things about one-pot recipes is that despite all the cooking that goes into creating those tasty meals, doing dishes isn’t really an issue. As the name suggests, everything happens in just one pot or pan. That’s pretty fantastic in and of itself, isn’t it? Even better when those one-pot dishes also taste delicious! That’s why we’ve put our heads together and come up with 3 quick and easy one-pot recipes that are perfect for weeknight dinners. We’ve got garlic herb chicken with rice, a sausage and pepper penne pot, plus the most comforting baked spaghetti and meatballs ever. See for yourself!
Each one-pot recipe makes enough for 4-6 people.
1. Garlic Herb Chicken With Rice
You’ll Need:
- 4 chicken thighs
- 4 tsp salt, divided
- 4 tsp pepper, divided
- 4 tsp paprika, divided
- 4 tsp garlic powder, divided
- 1 red onion, diced
- 1 cup rice
- 1½ cups chicken broth
- 2 tbsp chopped fresh herbs
Here’s How:
1.1 Heat some olive oil in a pot over medium heat. Sprinkle 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of paprika, and 1 teaspoon of garlic powder over each chicken thigh and rub the spices into the skin. Add the seasoned chicken thighs to the pot and cook on both sides.
1.2 Remove the chicken thighs from the pot. Add the red onion, uncooked rice, chicken broth, and fresh herbs to the pot and bring to a simmer.
1.3 Put the chicken thighs back in the pot and cover with a lid. Transfer the pot to a preheated oven and cook at 400°F for 35 minutes.
2. Sausage & Pepper Penne Pot
You’ll Need:
- 4 hot dogs, chopped
- ½ red bell pepper, cut into strips
- ½ yellow bell pepper, cut into strips
- ½ green bell pepper, cut into strips
- ½ onion, sliced
- salt & pepper to taste
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp garlic powder
- 1 qt whole milk
- 11 oz uncooked penne noodles
- 2 cups shredded mozzarella
- 2 tbsp chopped fresh herbs
Here’s How:
2.1 Heat some oil in a pan and add the onion slices, hot dog pieces, and bell pepper strips. Season everything with salt, pepper, cumin, garlic powder, and chili powder.
2.2 Add the uncooked pasta and milk, cover the pan with a lid, and let everything simmer. After a while, add the shredded cheese and fresh herbs. Once the pasta is al dente, it’s done!
3. Baked Spaghetti & Meatballs
You’ll Need:
- 1 lb ground beef, formed into meatballs
- ½ onion, diced
- 1 tbsp paprika
- 1 tsp garlic powder
- salt & pepper to taste
- 1 tbsp tomato paste
- 14 oz crushed tomatoes
- 8 oz uncooked spaghetti noodles
- 3 cups water
- ½ cup shredded cheddar
- ½ cup shredded mozzarella
- 2 tomatoes, diced
- 2 tbsp chopped fresh herbs
Here’s How:
3.1 Heat some oil in a pan and fry the meatballs. Add the diced onion, salt, pepper, paprika, garlic powder, and tomato paste to the skillet.
3.2 Add the crushed tomatoes, uncooked spaghetti noodles (break them in half to make them fit in the pan more easily), and water. Cover the pan with a lid and let everything simmer.
3.3 Add the shredded mozzarella and cheddar cheese and let everything continue to simmer until the pasta is al dente. Serve this delish one-pot dish with diced tomatoes and fresh herbs.
