1. Bubble Potato Pillows

Ingredients:

  • 3 large potatoes
  • ice water
  • 1 egg
  • 1 rosemary sprig
  • coarse salt
  • hot cooking oil

Instructions:

Boil the potatoes until soft and remove them from the water. To easily remove the peels, make a horizontal incision all the way around each potato, dunk them in ice water, and then pull off the peels. Mash the peeled potatoes until smooth, add the egg, and knead everything together by hand. Shape the mashed potatoes into a long strand and cut the strand into 10 equal pieces. Use an egg slicer or press a fork into each potato piece to create a grooved pattern, fry the bubble potato pillows in hot cooking oil until golden brown, and season with rosemary and salt.

2. Smashed Potatoes

Prep Time: 5 minutes

Cooking Time: 50 minutes

Difficulty Level: Easy

Ingredients:

  • 4 medium potatoes
  • ¼ stick butter, melted
  • ¼ cup sour cream
  • 2 tbsp olive oil
  • 2 tbsp vinegar
  • 1 small red onion, sliced
  • 4 oz bacon, diced
  • chives & pepper to garnish

Instructions:

Boil the potatoes in salted water until soft, drain the water, and let the potatoes dry. Place the lukewarm potatoes on a baking tray and flatten them with your fist. Drizzle the melted butter over the potatoes and top with sour cream. Marinate the red onion slices in oil and vinegar and place them on the potatoes along with the diced bacon. Transfer the baking tray to a preheated oven and cook at 350°F for 30 minutes. Garnish the smashed potatoes with chives and pepper before serving.

3. Potato Fritters

Cooking Time: 30 minutes

Ingredients:

  • 8 small potatoes
  • ¾ cup flour
  • 2 tbsp plain yogurt
  • 2 eggs
  • 1 tsp crushed red pepper
  • 1 tbsp chopped parsley
  • hot cooking oil

Instructions:

Boil the potatoes in salted water until soft, drain the water, and let the potatoes dry. Place the potatoes in a jar and add the flour, plain yogurt, eggs, crushed red pepper, and parsley. Shake the jar until combined and pour the mixture into a pan with hot cooking oil. Fry the pancake fritters about 5 minutes on each side until crispy.
