Forget potatoes as you currently know them – you aren’t going to find the standard baked potatoes, potato pancakes, French fries, potato wedges, or hash browns here. Instead, we’re making 3 entirely new potato dishes that will blow your mind!
1. Potato Pizza
You’ll Need:
- 2 lbs floury potatoes
- ¼ stick butter, melted
- salt & pepper to taste
- 3 oz grated parmesan
- ½ cup mascarpone
- ½ tsp oregano
- 10 pepperoni slices
- 4 oz mozzarella
Here’s How:
1.1 Preheat the oven to 400°F. Peel the potatoes and boil them in salted water. Grease a springform pan with butter, put the potatoes inside, and mash them with a glass mug.
1.2 Pour the melted butter, salt, pepper, and grated parmesan over the potatoes, put the pan in the oven, and cook for 15 minutes.
1.3 Spread mascarpone over the potatoes, sprinkle oregano on top, cover with mozzarella and pepperoni slices, and cook for another 10 minutes or until the cheese has melted and turned golden brown.
2. Potato Salad Cake
You’ll Need:
- 2 lbs potatoes
- 2 red apples
- 10 oz pickles
- 1 onion
- 1 cup cream cheese
- ⅔ cup mayonnaise
- 8 hot dogs
- salt & pepper to taste
- 1 tomato
Here’s How:
2.1 Peel the potatoes, boil them in salted water, and cut the cooked potatoes into cubes. Cut the apples, onion, and half of the pickles into small pieces and add to the potatoes.
2.2 Combine the mayonnaise and cream cheese, season with salt and pepper, mix into a cream, and add the mayo cream to the rest of the ingredients. Feel free to add some pickle juice to make it even creamier.
2.3 Pour the potato salad into a springform pan and refrigerate for at least 1 hour.
2.4 Cut the hot dogs and remaining pickles into slices and arrange them in concentric circles on top of the cake, with a tomato slice in the middle. Carefully remove the springform ring before serving.
3. Marinated Fried Potatoes
You’ll Need:
- 2 lbs small potatoes
- 2 eggs
- 1 large spoonful of yogurt
- ¾ cup flour
- 1 tsp paprika
- 1 tbsp dill
- 1½ tsp salt
- oil for frying
Here’s How:
3.1 Peel the potatoes and boil them in salted water. Mix the eggs, yogurt, flour, paprika, dill, and salt together in a bowl and fold in the cooked potatoes.
3.2 Heat some oil in a pan over medium heat and fry the marinated potatoes until crispy.
