Mashed potato button mushrooms, breadsticks, and even chips – these potato snacks will transform your boring old potatoes into super spuds!
1. Mashed Potato Button Mushrooms
Yield: 2 servings

Ingredients:
- 12 oz floury potatoes, peeled
- 1⅓ cups potato starch
- ⅔ cup water
- 1 red chili pepper, sliced
- 1 garlic clove, diced
- ⅓ cup soy sauce
- ¼ cup vegetable oil
- 1 tbsp sugar
- sliced leek to garnish
Instructions:
Boil the potatoes and mash them. Add the potato starch and water to the potatoes and knead the mixture into a dough. Use an ice cream scoop to form several small balls from the mashed potato dough, press the mouth of a glass bottle into the bottom of each ball to create an imprint, and cook the mashed potato balls in boiling water for 5 minutes. Combine the red chili pepper, garlic, soy sauce, vegetable oil, and sugar and soak the mashed potato balls in the marinade for about 10 minutes. Garnish the mashed potato button mushrooms with sliced leek before serving.
2. Mashed Potato Breadsticks

Ingredients:
- 14 oz waxy potatoes, peeled
- ⅓ cup corn starch
- 1 tsp salt
- ¼ tsp pepper
- cooking oil for frying
Instructions:
Boil the potatoes and mash them. Add the corn starch, salt, and pepper to the potatoes and knead the mixture into a dough. Place the mashed potato dough on parchment paper, roll it out to ⅓-inch thickness, and press a clean oven rack into the mashed potato dough to equally divide it into strips. Fry the mashed potato breadsticks in hot cooking oil until golden brown.
3. Mashed Potato Chips

Ingredients:
- 4 oz floury potatoes, peeled
- paprika to taste
Instructions:
Boil the potatoes until they are very soft and almost falling apart. Let them evaporate and then strain them through a sieve. Pour the mixture into a saucepan over low heat and stir out the remaining liquid. Thinly spread the mixture over a piece of parchment paper, place the parchment paper on a baking tray, transfer the baking tray to a preheated oven, and cook at 125°F for 2 hours. Break the mashed potato sheet into several smaller pieces and season the mashed potato chips with paprika before serving.
