1. Seasoned Accordion Fries
Yield: 2 servings
Prep Time: 15 minutes
Cooking Time: 15 minutes
Difficulty Level: Easy
You’ll Need:
- 1 lb potatoes
- ½ tsp garlic powder
- 1 tsp paprika
- 1 tbsp salt
- 1 tsp oregano
- cooking oil for frying
- 2 wooden skewers
Here’s How:
1.1 For the seasoned accordion fries, start by cutting off the curved sides of the potatoes so that only rectangular pieces of potato remain.
1.2 Cut the rectangular pieces of potato into 2 slices, each about ½ inch thick.
1.3 Lay 1 slice of potato down lengthwise between 2 wooden skewers on a clean work surface. Make 10–15 evenly spaced vertical cuts very close to one another in the potato, stopping the cut once the knife hits the wooden skewers.
1.4 Flip the slice of potato over and make 10–15 evenly spaced diagonal cuts, once again stopping the cut once the knife hits the wooden skewers. Repeat this process with the remainder of the potatoes.
1.5 Cook the accordion potatoes for about 2 minutes in boiling water, then dry them off. Heat a pot filled with cooking oil on the stove and fry the potatoes until golden brown.
1.6 Stir together the garlic powder, salt, paprika, and oregano and season the accordion fries with the spice mixture.
2. Thin-Cut Parsley Chips

Prep Time: 15 minutes
Cooking Time: 15 minutes
Total Time: 30 minutes
Difficulty Level: Easy
You’ll Need:
- ½ lb potatoes, peeled
- 3 sprigs of parsley
- cooking oil for frying
- vegetable peeler
Here’s How:
2.1 To make the thin-cut parsley chips, wash and peel the potatoes, then use the vegetable peeler to cut the peeled potatoes into very thin slices.
2.2 Place 1 parsley leaf on ½ of the slices of potatoes, then cover the parsley leaf with second slice of potato.
2.3 Heat a pot filled with cooking oil on the stove and fry the thin-cut parsley chips until golden brown. When frying the chips, don’t fry too many at the same time, or they might stick together.
3. Skewered Spiral Potatoes
Yield: 2 servings
Prep Time: 5 minutes
Cooking Time: 10 minutes
Difficulty Level: Easy
You’ll Need:
- 3 potatoes
- 3 stuffed olives
- cooking oil for frying
- ketchup to serve
- 3 wooden skewers
Here’s How:
3.1 For the skewered spiral potatoes, wash the potatoes and cut off the rounded sides, leaving rectangular pieces of potato.
3.2 Cut each of the rectangular pieces of potato into smaller slices approximately the same size as one another, then stack the slices at 1 corner on a wooden skewer. Rotate the skewered slices of potatoes around the wooden skewer so that they look like mini spiral staircases.
